Rich Muffins
This basic muffin recipe is from James Beard's American Cookery page 794. It is a good recipe to embellish.
Yield: 10 to 12 normal sized muffins
Oven temperature: 425 degrees F.
Description: moist and yummy
Suggestions: don�t over bake.
Ingredients
2 c. sifted flour - all purpose |
2 eggs, beaten |
1/2 c. sugar |
1/2 c. milk |
1 Tbs. baking powder |
1/2 c. melted butter |
1/2 tsp. salt |
Directions:
Preheat oven to 425 degrees F.
Butter the muffin tins.
Sift all the dry ingredients into a mixing bowl.
Combine the egg, milk, and melted butter.
Make a well in the center of the dry ingredients and add the liquid at one time.
Mix very lightly, just until the dry ingredients are moistened.
Fill the buttered tins about 2/3 full.
Bake at 425 degrees 20 to 25 mintues, or until nicely browned and puffy.
